The other day I was experimenting in the kitchen and came up with this easy bread substitute recipe that can be cooked in under 5 minutes.
Unlike most breads, it’s high in protein and low in carbs: a winning combo for anyone who is mindful of their weight. It is dairy and gluten-free, contains a good amount of beneficial Omega-3 fats and fiber, which support digestive and cardiovascular health.
You can have it for breakfast with some grass fed butter, it can easily be taken along to the office and makes a terrific snack for those moments when cravings strike (just add a spread of nut butter, home-made tapenade or guacamole).
Just give it a try! You would need:
2 free range eggs
3 table spoons of flaxseed flour (whole flax seeds can easily be ground into flour in a blender)
1 table spoons of hemp seeds (you can substitute them with equal amount of flaxseed flour)
½ tea spoon of baking powder*
1 table spoon of chopped herbs (e.g. parsley, chives)
Salt and pepper to taste
Lightly beat 2 eggs with a fork, add baking powder, seasoning, herbs, flaxseed flour and hemp seeds (if using). Pour the mixture into a microwave safe container (avoid plastic ones) and microwave for approx. 3 minutes. When ready, take out, let it cool down and serve/save for later.
This basic recipe can be altered as you please. You can experiment with spices, add other seeds, chopped ham or even grated cheese (provided you are not following a dairy-free diet).
*Some baking powders may contain gluten. If you are gluten sensitive, use certified gluten-free baking powders or baking soda with lemon juice instead.
